Research Reveals Satiety and Dietary Intake Benefits of
Protein-Rich Egg White Breakfast Compared to Isocaloric Toaster
Pastry Breakfast
A new study conducted by Creighton University and presented at
the Academy of Nutrition and Dietetics’ 2015 Food &
Nutrition Conference & Expo™ (FNCE®) shows that selecting a
high protein breakfast, like egg whites, may not only affect how
full and satisfied young women feel during the morning, but may
help them eat less throughout the entire day.
“It’s no secret that college students are short on time most
mornings, and may end up skipping breakfast or grabbing a pastry
that can leave them short on satisfaction and protein,”
says Joan Eckerson, PhD, Professor at Creighton University,
who conducted the study. “This research showed that young
women can feel full over the morning, and eat less over the day, by
choosing a protein-rich egg white breakfast.”
The study found that college-age women ate 10 percent fewer
calories daily when they ate a protein-rich egg white breakfast
made with Egg Beaters® Original instead of toaster pastries. They
also increased their daily protein intake by 24 percent and felt
more full and satisfied. Egg Beaters® is simply the egg minus
the yolk and provides complete, high-quality protein without the
fat and cholesterol of whole eggs.
These findings build on previous research showing that egg
whites – with the same calories and twice the volume of whole eggs
– are an excellent choice for breakfast, as they help people feel
more satisfied than a whole egg breakfast.

ABOUT THE STUDY & METHODOLOGYIn the randomized,
cross-over study, 31 female college students consumed two different
breakfasts providing about the same amount of calories for five
days each. One week, they consumed a protein-rich egg white
breakfast with 1¼ cup egg whites (Egg Beaters® Original providing
140 calories, the same calories as 2 whole eggs) and two pieces of
toast with spread (breakfast total, 350 calories, 35 grams protein,
32 grams carbohydrate, 11 grams fat) for five days. The alternate
week, they consumed two low-fat toaster pastries (360 calories, 4
grams of protein, 76 grams of carbohydrate, 5 grams of fat) for
five days.
Throughout the morning, participants were asked to rate
their level of fullness, hunger, satisfaction and desire to eat.
They also recorded what they ate throughout the day. When compared
to the toaster pastries, the protein-rich egg white breakfast
significantly reduced the participants’ daily caloric intake by 10
percent (for an average reduction of 178 calories over the course
of the day) and increased protein intake by 24 percent (for an
average increase of 14 grams of protein over the course of the day)
when compared to the toaster pastry breakfast. The Egg Beaters®
breakfast was also found to be more filling and satisfying than the
toaster pastry breakfast over three hours.
