Although they may drill through each potential pay zone and log one or two at a time, they certainly could not case each zone at a time as you need a smaller and smaller casing size each time, and you would run out of diameter pretty quickly! The casing length will be determined by the integrity of the well bore and how it can stand up to open hole conditions. Therefore they will drill as long an open hole as they can without compromising the geology. For example, a particular zone may be shale prone and will stand up for only a certain amount of time before it may start to expand and narrow/fill the hole, thus preventing further drilling, logging and ability to run casing past that zone. They will always try to minimize pipe trips and logging runs and so will always drill as far and through as many zones as possible.
